Selecting the raw materials
Everything begins with the choice of grains. We work exclusively with local producers whose plots and growing practices we know intimately. Every harvest is analysed before being accepted into our distillery.
Fermentation
Yeasts play a fundamental role in shaping the final character of the distillate. We have been cultivating our own strains for more than thirty years, ensuring a consistent aromatic profile from year to year, while preserving the slight natural variation that gives each vintage its charm.
Double distillation
Our bespoke copper still carries out a slow double distillation. The first pass extracts the raw alcohols. The second, conducted with extreme precision, separates the heart of the run — the purest and most aromatic fraction — from the heads and tails.
It is in this precise moment, where the distiller's eye makes all the difference, that the identity of our eau-de-vie is born.
